Chicken Burgers with Horseradish Sauce

2pounds chicken breast
1cup onion, grated
1/4cup loose flat Italian parsley leaves
1/4-- loose basil leaves
2tablespoons fresh chopped chives
1/4cup Italian seasoned bread crumbs
2cloves garlic, minced

-- Olive oil to coat patties
6slices Provolone cheese
4tablespoons real mayonnaise
1tablespoon honey Dijon mustard
1tablespoon ketchup
1teaspoon prepared horseradish
1tablespoon grated parmesan cheese
1/8cup basil leaves, packed
-- salt and pepper
1-- head garlic, roasted (See directions below.)
12slices of French bread
-- Olive oil
-- Lettuce
-- Tomato


To roast garlic for sauce and bread, remove papery outer skin from garlic heads. Do not peel off or separate cloves. Cut top off garlic heads, leaving the root intact. Place cut sides up in small baking dish. Sprinkle with the olive oil. Season with salt and pepper. Cover with foil and bake at 425 for 30 minutes. Cool for 10 minutes. Two cloves will be used in the sauce. The rest will be spread on grilled French bread.

Cut chicken breasts into large chunks and pulse in food processor with blade until you have a very coarse ground. Add onion, herbs, bread crumbs, and garlic. Add salt and pepper. Pulse just to mix and until herbs are chopped.

Shape into six patties and chill for 1 hour before grilling.

Prepare sauce. Place mayonnaise, mustard, ketchup, horseradish, parmesan cheese, basil leaves and two roasted garlic cloves in blender and puree until smooth. (Save rest of garlic cloves to spread on bread.) Refrigerate until ready to serve.

Preheat grill. Coat patties with olive oil before grilling. Grill about 4 minutes per side. Top with sliced cheese the last minute on grill.

Brush French bread with olive oil and grill until toasted. Remove from grill and spread on roasted garlic clove on 6 of the slices.

Remove burgers from grill. To assemble, place one piece of French bread that has been spread with roasted garlic on plate. Place burger on top and place a tablespoon of sauce on top of patty. Garnish with lettuce and tomato and the other slice of French bread. Place extra sauce on table so guests may apply more if desired.
