Ingredients Tomato Salsa:1 large tomato, seeded and finely chopped1 small shallot, minced1/4 cup finely chopped cilantro2 teaspoons fresh lime juice1/2 teaspoon chili powder1/2 teaspoon ground cumin1/2 teaspoon salt1/4 teaspoon coarsely ground black pepper, divided1/8 teaspoon garlic powderLettuce Rolls:1 cup part-skim ricotta1/2 cup grated Parmesan cheese16 large Boston lettuce leaves Instructions To prepare salsa, combine tomato, shallot, cilantro, lime juice, chili powder, cumin, salt, pepper and garlic powder in a medium bowl; stir well.
