You are here: Home » Recipes » Healthy Banana Zucchini Bread Healthy Banana Zucchini Bread Recipe by Jacki LaCerte Yield 16 servings PrintEmail Ingredients 1/4 cup margarine3 bananas, mashed1/8 cup honey2 1/2 cups 50/50 flour1 small zucchini, peeled, deseeded, and grated1/4 cup oatmeal1 Healthy Harvest applesauce cup1/4 cup egg substitute2 tablespoons cinnamon2 tablespoons vanilla3/4 cup skim milk1 tablespoon vinegar1 1/2 teaspoons baking soda Instructions Preheat oven to 350F. Put margarine and bananas in bowl. Beat with mixer. Add honey, flour, shredded zucchini, oatmeal, applesauce, egg substitute, cinnamon and vanilla in bowl. Pour 3/4 milk in a small bowl; add vinegar and baking soda. Mix together and add to banana mixture. Beat until well combined. Pour into large bread pan lined with aluminium foil. Bake 1 hour. Remove from oven and lift out bread with foil and place on cooling rack. After 15 minutes, remove aluminium foil and let cool completely.
