Put margarine and bananas in bowl. Beat with mixer. Add honey, flour, shredded zucchini, oatmeal, applesauce, egg substitute, cinnamon and vanilla in bowl.
Pour 3/4 milk in a small bowl; add vinegar and baking soda. Mix together and add to banana mixture. Beat until well combined.
Pour into large bread pan lined with aluminium foil. Bake 1 hour. Remove from oven and lift out bread with foil and place on cooling rack. After 15 minutes, remove aluminium foil and let cool completely.
