Healthy Banana Zucchini Bread

  • Yield 16 servings


1/4 cup margarine
3 bananas, mashed
1/8 cup honey
2 1/2 cups 50/50 flour
1 small zucchini, peeled, deseeded, and grated
1/4 cup oatmeal
1 Healthy Harvest applesauce cup
1/4 cup egg substitute
2 tablespoons cinnamon
2 tablespoons vanilla
3/4 cup skim milk
1 tablespoon vinegar
1 1/2 teaspoons baking soda


  1. Preheat oven to 350F.
  2. Put margarine and bananas in bowl. Beat with mixer.  Add honey, flour, shredded zucchini, oatmeal, applesauce, egg substitute, cinnamon and vanilla in bowl.
  3. Pour 3/4 milk in a small bowl; add vinegar and baking soda. Mix together and add to banana mixture.  Beat until well combined.  
  4. Pour into large bread pan lined with aluminium foil.  Bake 1 hour.  Remove from oven and lift out bread with foil and place on cooling rack.  After 15 minutes, remove aluminium foil and let cool completely.
