Haitian French Bread

  • Yield 6 to 8 servings

This bread is stuffed with a tasty butter mixture and cheese.


1/4 pound plus 2 tablespoons, butter
2 teaspoons Dijon mustard
1 medium onion, finely chopped
2 tablespoons poppy seeds
2 tablespoons lemon juice
8 ounces Monterey Jack cheese, sliced
1 loaf French bread


  1. Preheat oven to 350F.
  2. Combine first 5 ingredients in saucepan.  Simmer until onions are soft.
  3. Slice bread diagonally about 1-inch thick.  Do not cut through the bottom crust.
  4. Spoon butter mixture in between slices.  Stuff each cut with cheese.  Wrap in foil, leaving part of the top exposed.
  5. Bake at 350F for 20 minutes.
