Gruyere Grits

1quart milk
1cup regular grits
1stick butter, cut in cubes
1teaspoon salt
dash Tabasco
3/4stick butter, melted
1cup Gruyere cheese, grated


  1. In large saucepan bring milk to boil; add grits and cubed butter.  Cook over medium heat 5 minutes or until thickened, stirring frequently.  Pour warm grits into large bowl of electric mixer; add salt and Tabasco; beat 5 minutes at fast speed.  Pour into buttered 13×9-inch baking dish; cool.  Preheat oven to 350F.  Cut grits into squares, do not remove from baking dish; top with melted butter and cheese.  Bake 30 minutes.  Wonderful with steak.
