Ground Chicken Gumbo

1pound chicken
1teaspoon salt
1teaspoon *New Orleans gumbo seasoning
1medium onion, sliced in rings
2cups chicken broth, warmed
1-- (28 ounces) can crushed tomatoes with basil
1package (16 ounces) frozen vegetable gumbo mixture
1-- rib celery, sliced
1/2cup chopped cabbage


  1. Heat large Dutch oven over medium high temperature. Add chicken, salt and gumbo seasoning; brown, stirring, about 5 minutes. Add onion and continue to cook, stirring, about 5 minutes more. Stir in warm chicken broth and tomatoes; bring to a boil. Add vegetable gumbo mixture, celery and cabbage. Return almost to boiling, reduce heat and simmer over medium low temperature about 20 minutes or until vegetables are tender. Serve in bowls with croutons.

* Creole seasoning may be substituted if gumbo seasoning is not available
