Grilled Apple Salmon

  • Yield 4 servings

Ingredients

3/4 cup apple juice/cider
1/3 cup soy sauce
2 tablespoons unsalted butter
1 large garlic clove, crushed
1 salmon fillet, skin on

Instructions

  1. In a noncorrosive saucepan, bring juice and soy sauce to a boil.  Reduce to moderate simmer for 3 min. Add butter and galic; continue cooking to reduce until it coats the back of a spoon, about 20 minutes.  Cool to room temperature.  Pour over salmon fillet.  Let sit 1 to 1 1/2 hours in refrigerator.  On a low heat barbecue, place fish skin side down.  Tent with tin foil and cook for 15 to 20 minutes.  Cut into servings.  (The skin may just stay on the grill.)
