Grill Secret: Dry Rub

If you’ve ever tasted meat or fish grilled by a master and wondered what made it so flavorful, the answer probably lies in a dry rub.
A dry rub is simply a mixture of salt, pepper, paprika, and garlic powder. Rubbed well into your meat before barbecuing or grilling, it imparts a punch that makes even basting sauce optional. Start with this basic recipe and experiment on your own.
- 1/4 cup paprika
- 1/4 cup salt (coarse kosher salt works great)
- 1/4 cup coarse black pepper
- 1 tablespoon garlic powder
- Combine all ingredients in a jar with a lid. Close and shake to blend the spices. Sprinkle over meat and rub lightly before grilling.
