Greek Dreams Salad
- Yield: 4 to 6 servings
- 1cup coarse bulgar wheat
- 2cups cleaned and minced parsley
- 1/2cup kalamata olives,chopped
- 2large tomatoes
- 1cup sliced green onions
- 1/4cup olive oil
- 2tablespoons lemon juice
- 1cup crumbled feta cheese
Put bulgar wheat in a large bowl and cover with boiling water. Let set one hour then drain well.
Mix togeather all other ingredients. Stir and serve.
