Greek Dreams Salad

  • Yield 4 to 6 servings


1 cup coarse bulgar wheat
2 cups cleaned and minced parsley
1/2 cup kalamata olives,chopped
2 large tomatoes
1 cup sliced green onions
1/4 cup olive oil
2 tablespoons lemon juice
1 cup crumbled feta cheese


Put bulgar wheat in a large bowl and cover with boiling water. Let set one hour then drain well.

Mix togeather all other ingredients. Stir and serve.
