Greek Dreams Salad

  • Yield: 4 to 6 servings


1cup coarse bulgar wheat
2cups cleaned and minced parsley
1/2cup kalamata olives,chopped
2large tomatoes
1cup sliced green onions
1/4cup olive oil
2tablespoons lemon juice
1cup crumbled feta cheese


Put bulgar wheat in a large bowl and cover with boiling water. Let set one hour then drain well.

Mix togeather all other ingredients. Stir and serve.
