Greek Dreams Salad
- Yield 4 to 6 servings
- 1 cup coarse bulgar wheat
- 2 cups cleaned and minced parsley
- 1/2 cup kalamata olives,chopped
- 2 large tomatoes
- 1 cup sliced green onions
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 cup crumbled feta cheese
Put bulgar wheat in a large bowl and cover with boiling water. Let set one hour then drain well.
Mix togeather all other ingredients. Stir and serve.
