Grecian Shrimp with Feta Cheese
- Yield: 4 servings
- 1/2cup olive oil
- 1-- lemon, juice only
- 1teaspoon oregano
- 1/4cup butter
- 1-- sliced onion
- 4ounces feta cheese
- 1pound raw, peeled large shrimp, butterflied
- Saute onion, lemon juice, oregano and butter in oil. Add shrimp and cook until pink. Before serving add feta cheese in large chunks into hot mixture.
- Can serve on a bed of romaine lettuce or over pasta.
