Great Pumpkin Cookies

Taste the flavors of the season with these delicious pumpkin cookies.

Ingredients

2 cups flour
1 1/3 cups quick-cooking oats
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup (2 sticks) butter
1 cup solid-pack pumpkin
1 cup packed brown sugar
1 cup sugar
1 -- egg
1 teaspoon vanilla extract
3/4 cup chopped walnuts
3/4 cup raisins

Instructions

  1. Combine the flour, oats, baking soda, cinnamon and salt in a bowl.  Beat the butter in a mixing bowl until light and fluffy.  Add the pumpkin, brown sugar, sugar, egg, and vanilla and mix well.  Stir in the flour mixture.  Add the walnuts and raisins.  Drop by 1/4 cupfuls and spread into 3-inch circles on a nonstick cookie sheet.  Bake at 350F for 14 to 16 minutes or until firm and light brown.  Cool on a wire rack.  Decorate as desired with icing, chocolate chips, candies, rainsins or nuts.
