Chicken Veronique

Ingredients

Cooking Oil Spray
4 -- Bonless, Skinless Chicken Breast Halves
-- Salt & Pepper to Taste
2 tablespoons Olive Oil
1 cup Green Seedless Grapes
1 cup White Grape Juice
2 whole Cloves
1 cup Chicken Broth
1 teaspoon Ginger
1 tablespoon Lemon Juice
1/2 cup Sliced Green Onions

Instructions

Preheat oven to 375 degrees.

Spray 9/13" baking dish with cooking oil spray.

Lightly salt and pepper the chicken. Over medium heat add olive oil and brown chicken on both sides. Move chicken to prepared baking dish. Add the grapes, grape juice, cloves, broth, ginger and lemon juice to skillet and stir over medium heat for 5 minutes.

Remove from heat, stir in green onions and pour over chicken.

Bake in the preheated oven for 35 minutes.

Place chicken on serving dish, remove cloves and pour sauce over chicken.

Serves 4
