  • Yield 2 1/2 dozen

This granola bars are packed with nutrient rich fruits and nuts.

1/2 cup sesame seeds
1/2 cup shelled sunflower seeds
1/4 cup wheat germ
3/4 cup honey
3/4 cup chunky peanut butter
3 cups oat flakes
1/2 cup walnuts, filberts, or almonds
1/3 cup dried apricots
1/3 cup dried prunes
1/3 cup raisins

  1. Spread the sesame sees in a 7×11-inch baking dish and cook uncovered in the microwave for 5 minutes or until seeds are golden brown.  Stir seeds several times while cooking.  Set aside.  Follow same procedure for sunflower seeds and wheat germ.  Place honey in a 2-quart bowl and microwave 2 1/2 minutes.  Add peanut butter and cook 1 minute longer.  Combine sunflower seeds, wheat germ, honey mixture, oat flakes, nuts, apricots, prunes, and raisins; mix well.  Spread half of the sesame seeds back into the baking dish.  Press the oat mixture into the pan.  Sprinkle top with remaining sesame seeds and press firmly.  Chill 1 hour.  Cut into bars and wrap each in plastic wrap.  Wrapped bars will keep indefinitely.
