Grandmother’s Angel Food Cake

  • Yield 12 servings

Here's a delicious low-fat way to enjoy dessert.

1 1/2 cups sugar
1 cup Down Cake flour
1 1/2 cups egg whites
Pinch of salt
3/4 teaspoon cream of tartar
1 teaspoon vanilla
1 teaspoon lemon flavorings

  1. Sift flour and sugar before measuring, then sift flour and sugar together 6 or 8 times.  Beat egg whites by hand, do not use an electric mixer.  When frothy, add salt and cream of tartar and continue beating until you can turn the bowl you are beating them in upside down.  Fold in flour mixture a little at a time.  Add flavorings.  Put in an ungreased angel food cake pan.  Start in a cold oven, gradually increasing temperature to 350F.  bake about 45 minutes.  When done, turn pan upside down and let it remain in that position until cool.  Remove from pan and ice with your favorite icing.
