Golden Harvest Soup

1 cup chopped sweet onion
1 tablespoon olive oil
4 cups mashed cooked butternut squash or pumpkin
3 cups chicken broth
2 cups unsweetened applesauce
1 1/2 cups milk
1 -- bay leaf
1 tablespoon lime juice
1 teaspoon curry powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon each pepper and ground nutmeg (optional)


1. In a large saucepan, sauté onion in oil until tender. Add the rest of the ingredients and simmer, uncovered, for 30 minutes or so. Serves 10.
