Golden Harvest Soup

Ingredients
- 1 cup chopped sweet onion
- 1 tablespoon olive oil
- 4 cups mashed cooked butternut squash or pumpkin
- 3 cups chicken broth
- 2 cups unsweetened applesauce
- 1 1/2 cups milk
- 1 -- bay leaf
- 1 tablespoon lime juice
- 1 teaspoon curry powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon each pepper and ground nutmeg (optional)
Instructions
1. In a large saucepan, sauté onion in oil until tender. Add the rest of the ingredients and simmer, uncovered, for 30 minutes or so. Serves 10.
