Goat Cheese and Proscuitto Stuffed Figs

  • Yield 5-6 servings


10-12 large figs
4 ounces herb goat cheese
4 slices procuitto, chopped
1 tablespoon fresh mint, chopped
1/4 cup honey
2 tablespoons cashews, chopped


  1. Cut a cross 3/4 of the way down the way middle of each fig. 
  2. Combine cheese, proscuitto, mint and 2/3 of the honey in a small mixing bowl. Mix well.
  3. Spoon in or pipe in cheese mixture.
  4. Top with cashews and drizzle with remaining honey.
