Goat Cheese and Proscuitto Stuffed Figs
- Yield 5-6 servings
- 10-12 large figs
- 4 ounces herb goat cheese
- 4 slices procuitto, chopped
- 1 tablespoon fresh mint, chopped
- 1/4 cup honey
- 2 tablespoons cashews, chopped
- Cut a cross 3/4 of the way down the way middle of each fig.
- Combine cheese, proscuitto, mint and 2/3 of the honey in a small mixing bowl. Mix well.
- Spoon in or pipe in cheese mixture.
- Top with cashews and drizzle with remaining honey.
