Glazed Lemon Pound Cake with Blueberries

Ingredients
- 1 1/4 cups all-purpose flour
- 3/4 cup fructose
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup orange juice
- 1/8 cup lemon juice
- 1/3 cup canola oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 teaspoon lemon zest
- 1/2 cup frozen blueberries
- 1/2 cup powdered sugar
- 1/8 cup lemon juice
- 1 teaspoon melted butter
Instructions
- Preheat oven to 300 degrees. Spray baking pan (3 x 4 1/2 x 8-inch) with pan spray.
- Combine flour, fructose, baking powder, soda and salt.
- Mix together orange juice, lemon juice, canola oil, vanilla, lemon zest and eggs.
- Incorporate wet items into dry items. Add frozen blueberries.
- Place batter into baking pan. Bake 50-55 minutes.
- To prepare glaze: Combine powdered sugar, lemon juice and melted butter. Brush cake with powdered sugar lemon juice glaze.
