Glazed Lemon Pound Cake with Blueberries

A delicate pound cake studded with blueberries.



1 1/4 cups all-purpose flour
3/4 cup fructose
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 cup orange juice
1/8 cup lemon juice
1/3 cup canola oil
1 teaspoon vanilla extract
2 eggs
1/2 teaspoon lemon zest
1/2 cup frozen blueberries
1/2 cup powdered sugar
1/8 cup lemon juice
1 teaspoon melted butter


  1. Preheat oven to 300 degrees. Spray baking pan (3 x 4 1/2 x 8-inch) with pan spray.
  2. Combine flour, fructose, baking powder, soda and salt.
  3. Mix together orange juice, lemon juice, canola oil, vanilla, lemon zest and eggs.
  4. Incorporate wet items into dry items. Add frozen blueberries.
  5. Place batter into baking pan. Bake 50-55 minutes.
  6. To prepare glaze: Combine powdered sugar, lemon juice and melted butter. Brush cake with powdered sugar lemon juice glaze.
