Garlic Spinach with Pine Nuts
- Yield: 4 servings
- 1tablespoon olive oil
- 8 garlic cloves, thinly sliced
- 2pounds spinach leaves
- Salt and freshly ground black pepper, to taste
- 1/2cup toasted pine nuts or almonds
- In a large nonstick skillet, heat oil over medium heat. Add garlic and let begin to brown lightly. As soon as garlic browns, add spinach and stir well, adding a few drops of water to slow the browning process. Saute 2 minutes just until wilted and season with salt and pepper. Add nuts.
Note: You can use triple washed spinach leaves for this recipe or substitute Swiss chard or kale. Remove heavy stems from these greens before using. Three bunches of greens can be substituted for the 2 pounds spinach.
How to toast nuts: Place nuts in a single layer on a baking sheet. Toast in a 350F oven about 10 minutes, shaking pan periodically to turn the nuts, until nuts are golden and fragrant.
