Garlic Pine Nut Spinach

  • Yield 6 servings

Toasted pine nuts add crunch and texture to sauced spinach.


1 tablespoon pure olive oil
2 garlic cloves, minced
2 (10-ounce) bags spinach, well washed
1/4 cup pine nuts, toasted*
1/2 teaspoon salt
pinch cayenne pepper


  1. Heat oil in a large skillet over medium heat. Add garlic and cook, stirring, 1 minute or until it begins to turn brown. Immediately add spinach and cook, stirring, 1 minute or until spinach begins to wilt. Add pine nuts, salt and pepper.
*To toast pine nuts: Cook pine nuts in a dry nonstick skillet over medium heat, stirring frequently, for about 2 minutes or until golden brown
