You are here: Home » Recipes » Chicken Ranch Sandwich with Fried Green Tomatoes Chicken Ranch Sandwich with Fried Green Tomatoes Yield servings PrintEmail Ingredients 1 1/2 -- lbs chicken breast tenders1 medium onion1 1/2 tablespoons butter -- Vegetable cooking spray -- Canola oil for frying1/2 cup cornmeal1 teaspoon black pepper2 large egg whites whisked2 1/2 pounds unripe (green) tomatoes,cut into 1/2 inch slices -- kosher salt -- romaine lettuce -- ranch dressing Instructions Combine cornmeal and pepper on a large plate. Place whisked egg whites on another plate. Dip tomato slices in egg whites and then coat with cornmeal mixture. Fry golden brown 3-5 minutes per side in nonstick pan, 3/4 inch canola oil on medium-high heat. Drain on paper towel lined plate and sprinkle with kosher salt. Dice medium onion, saute in medium high heat nonstick pan, coated with cooking spray. Add chicken breast tenders and butter, cook until lightly brown. Assemble chicken and tomatoes into a sandwich with lettuce and ranch dressing.
