Chicken Ranch Sandwich with Fried Green Tomatoes

- 1 1/2 -- lbs chicken breast tenders
- 1 medium onion
- 1 1/2 tablespoons butter
- -- Vegetable cooking spray
- -- Canola oil for frying
- 1/2 cup cornmeal
- 1 teaspoon black pepper
- 2 large egg whites whisked
- 2 1/2 pounds unripe (green) tomatoes,cut into 1/2 inch slices
- -- kosher salt
- -- romaine lettuce
- -- ranch dressing
Combine cornmeal and pepper on a large plate. Place whisked egg whites on another plate. Dip tomato slices in egg whites and then coat with cornmeal mixture. Fry golden brown 3-5 minutes per side in nonstick pan, 3/4 inch canola oil on medium-high heat. Drain on paper towel lined plate and sprinkle with kosher salt.
Dice medium onion, saute in medium high heat nonstick pan, coated with cooking spray. Add chicken breast tenders and butter, cook until lightly brown.
Assemble chicken and tomatoes into a sandwich with lettuce and ranch dressing.
