Fresh Tomato Sauce

  • Yield servings


2 tablespoons olive oil
1 -- onion, diced
1 small carrot, grated, or 1 red bell pepper, chopped (optional)
10 -- super ripe, juicy tomatoes, crushed (about 12 cups)
1 teaspoon coarse salt
-- Freshly ground black pepper
1 teaspoon sugar
1 tablespoon sherry vinegar
2 tablespoons olive oil
2 large garlic cloves, crushed
1/2 cup chopped fresh basil


  1. Heat olive oil in a Dutch oven. Add onion and carrot (if using) and sauté until tender. Add crushed tomatoes. Simmer 1 to 2 hours (depending on how watery your tomatoes are), until thick. Add remaining ingredients. Cook 15 minutes more.
