Fresh Strawberry Pie with Strawberry Gelatin

  • Yield 8 servings


1 1/4 cups flour
2 tablespoons sugar
1/2 cup butter
1 large egg yolk
1 cup sugar
3 tablespoons cornstarch
1/8 teaspoon salt
3 tablespoons white corn syrup
1 cup water
1 package strawberry-flavored gelatin
1 quart strawberries, washed and hulled
Whipped topping


  1. Crust: Preheat oven to 450F.
  2. Mix ingredients and shape into a ball.  Roll out or press into a 9-inch ungreased pie pan  Prick crust with a fork and bake in a about 12 minutes.  Let cool completely.
  3. Filling: Combine sugar, cornstarch, salt, syrup and water in a saucepan and cook until mixture thickens, about 5 minutes.  Add gelatin and blend.  Let cool.  Place berries into cooled pie crust. Spoon gelatin mixture over berries.  Refrigerate until set (4 hours).  Top with whipped topping.
