Fresh Salsa with shrimp
- Yield 4 cups
- 4-5 -- fresh jalapeno chilies
- 1 medium yellow onion
- 3 large tomatoes
- 1/2-1 pound small cooked shrimp
- 1 bunch fresh cilantro
- 3/4 cup vegetable oil
- 1-2 large avocados
- 2 quarts boiling water
Have a large bowl ready for all ingredients.
Wash jalapenos, tomatoes. and cilantro.
Cut stems from jalapenos and remove seeds, then slice length-wise and dice.
Place tomatoes in a large bowl and pour boiling water over tomatoes. Let set for a couple of minutes until skin falls off. Rinse tomatoes in cold water and dice.
Peel onion. Rinse with cold water. Dice and set aside.
Clean and wash cilantro. Chop and set aside.
Mix jalapenos, tomatoes, onions and cilantro in large bowl you set aside. Pour vegetable oil in and fold into mixture.
Take avocado and cut in half. Dice. Place diced avocado in bowl with the veggie mix.
Take cooked shrimp and combine with veggie mixture and avocado.
Pour into clear glass bowl
