Fresh Herb Potatoes

The heat from the potatoes warm the aromatic oils in the herbs

Ingredients

1 1/2 pounds baby red bliss potatoes, halved
Salt
Water
1/4 cup chopped dill
2 tablespoons chopped chives
2 tablespoons chopped parsley
1 tablespoon butter or soy margarine
Freshly ground black pepper

Instructions

  1. Place the potatoes in a pot of salted water to cover. Bring to a boil and cook 12 to 15 minutes until tender. Drain; add the herbs, butter, salt and pepper. Serve immediately.
