Fresh Herb Potatoes

The heat from the potatoes warm the aromatic oils in the herbs
Ingredients
- 1 1/2 pounds baby red bliss potatoes, halved
- Salt
- Water
- 1/4 cup chopped dill
- 2 tablespoons chopped chives
- 2 tablespoons chopped parsley
- 1 tablespoon butter or soy margarine
- Freshly ground black pepper
Instructions
- Place the potatoes in a pot of salted water to cover. Bring to a boil and cook 12 to 15 minutes until tender. Drain; add the herbs, butter, salt and pepper. Serve immediately.
