Fresh Herb Potatoes

  • Yield: 4 servings


1 1/2pounds baby red bliss potatoes, halved
1/4cup chopped dill
2tablespoons chopped chives
2tablespoons chopped parsley
1tablespoon butter or soy margarine
Freshly ground black pepper


  1. Place the potatoes in a pot of salted water to cover. Bring to a boil and cook 12 to 15 minutes until tender. Drain; add the herbs, butter, salt and pepper. Serve immediately.
