Fresh Apple Muffins

"These muffins are delicious for breakfast or for afternoon tea. Fresh apples in the fall make the best."
Ingredients
- 1 cup vegetable oil
- 2 cups sugar
- 3 cups all-purpose flour
- 3 eggs
- 1 cup chopped nuts
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 1 teaspoon soda
- 2 cups unpeeled, chopped apples
Instructions
- Preheat oven to 350F. Lightly grease cups of muffin tins.
- Mix together oil, sugar, flour and eggs. Stir in nuts, vanilla, salt, soda. Gently fold in apples. Fill muffin tins two-thirds full. Bake 20 to 25 minutes. Serve warm with cream cheese.
