Ingredients 1 cup vegetable oil2 cups sugar3 cups all-purpose flour3 eggs1 cup chopped nuts2 teaspoons vanilla extract1 teaspoon salt1 teaspoon soda2 cups unpeeled, chopped apples Instructions Preheat oven to 350F. Lightly grease cups of muffin tins. Mix together oil, sugar, flour and eggs. Stir in nuts, vanilla, salt, soda. Gently fold in apples. Fill muffin tins two-thirds full. Bake 20 to 25 minutes.
