French Breakfast Puffs

  • Yield 24 servings

For convenience sake, you may prepare these ahead, and freeze in foil for easy reheating.


1/2 cup sugar
1/3 cup shortening (part butter)
1 -- egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup milk
1/2 cup sugar
1 teaspoon cinnamon
6 tablespoons butter, melted


  1. Preheat oven to 350F.
  2. Cream sugar, shortening and egg.
  3. Sift together flour, baking powder, salt and nutmeg.  Add to creamed mixture alternately with milk, beating well after each addition. 
  4. Fill greased miniature muffin tins 2/3 full.
  5. Bake at 350F for 12 to 15 minutes.  
  6. Combine sugar and cinnamon.  Remove muffins from pans immediately, dip in butter and roll in sugar mixture until coated. 
  7. Serve warm.
