Feather-Light Muffins

  • Yield 12 servings

Cinnamon and nutmeg make this muffin a tasty treat.


1/3 cup shortening
1/2 cup sugar
1 -- egg
1 1/2 cups cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup milki
1/2 cup melted butter
1/2 cup sugar
1 teaspoon cinnamon


  1. Cream shortening and 1/2 cup sugar in bowl.  Beat in egg.  Mix cake flour with baking powder, salt and nutmeg.  Add to creamed mixture alternately with milk, mixing well after each addition.  Fill greased muffin cups 2/3 full.  Bake at 325F for 20 to 25 minutes or until golden brown.  Cool for 3 to 4 minutes.  Roll warm muffins in melted butter; coat with mixture of 1/2 cup sugar and cinnamon.  Serve warm.
