Fast and Creamy Polenta

Creamy polenta is to Italians what mashed potatoes are to Americans.


4 cups waters
1 teaspoon coarse salt
1 cup instant polenta
1/2 cup mascarpone cheese or cream cheese
Chopped parsley


  1. Bring water to a boil in a heavy saucepan. Add salt. Whisk in polenta in a steady stream until well combined. Remove from heat. Stir in mascarpone. Top with parsley.
