Fast and Creamy Polenta
- Yield 4-6 servings
Creamy polenta is to Italians what mashed potatoes are to Americans.
- 4 cups waters
- 1 teaspoon coarse salt
- 1 cup instant polenta
- 1/2 cup mascarpone cheese or cream cheese
- Chopped parsley
- Bring water to a boil in a heavy saucepan. Add salt. Whisk in polenta in a steady stream until well combined. Remove from heat. Stir in mascarpone. Top with parsley.
