Farmers Market Summer Mixed Grill

  • Yield 6 to 8 servings


1/2 pound zucchini
1/2 pound patty pan squash
2 whole artichokes, trimmed, dechoked and quartered
1 whole red onion
4 whole Anaheim peppers, seeded
3 whole heirloom tomatoes
2 cloves garlic
1 sprig fresh thyme
1 sprig fresh rosemary
1/2 cup olive oil
1 whole lemon, halved
1 pinch salt & pepper to taste


  1. wash all produce well, pat dry
  2. quarter patty pans, Anaheims and artichokes
  3. Cut zucchini into 3" lengths, and quarter
  4. cut red onion and tomatoes into 1' slices
  5. place all veg into large bowl, drizzle with olive oil, season with salt & pepper to taste
  6. place everything on a Large piece of foil, top with thyme & rosemary, fold up foil to create packet.
  7. place on low heat area of grill for 7-10 min. When cooked to desired tenderness, open packet and squeeze lemon over veggies.   Serve right from foil.
