Eating Healthy Shrimp Veggie Pasta

  • Yield 2 servings


1/2 box whole grain linguine pasta
1/2 whole red bell pepper, sliced
1/2 whole yellow bell pepper, sliced
1/4 whole red onion, sliced
1 teaspoon garlic, minced
2 tablespoons light olive oil
1/2 teaspoon crushed red pepper
12 medium raw, peeled shrimp, deveined


  1. Cook pasta & drain.
  2. Saute onions & peppers in 1 T of olive oil until tender.
  3. Season shrimp with salt & pepper. Saute in remaining oil. Toss pasta with garlic, veggies, and shrimp.
  4. Sprinkle with 2 T. basil and parmesean cheese, if desired.
