Ingredients

3cups cold basmati rice (leftover takeout works wonderfully)
1/3cup Italian dressing
2 large tomatoes, chopped
1 cucumber, peeled, seeded and chopped
1/2 red onion, chopped
1/2cup chopped parsley

Instructions

  1. Combine all ingredients in a bowl. Toss well.
