Dried Fruit and Walnut Bread

Ingredients

80 grams of each Dried dates, figs, plums and apples
50 grams dried cranberries
80 milliliters orange juice
50 milliliters caramel syrup
150 grams California walnuts
125 grams soft butter
150 grams sugar
2 sachets vanilla sugar
3 eggs
250 grams flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon clove powder
1 teaspoon lemon zest
1 teaspoon orange zest
For decoration
30 grams California walnuts
150 grams icing sugar
4-5 tablespoons orange juice
Some slices of figs, stripes of dates and cranberries for decoration

Instructions

  1. Cut the dried fruits into small pieces and mingle them. Heat up the orange juice and the syrup, pour over fruits and let infuse for 2 hours.
  2. Chop walnuts. Stir in butter till creamy. Add sugar, vanilla sugar and eggs bit by bit and stir in. Mix flour with baking powder and spices, stir in quickly. Mingle with dried fruits and walnuts. Put the dough into a greased cake tin of ca. 25 cm length. Bake in the preheated oven at 150C (gas: 1-2, recirculation air: 130C) for ca. 1 hour and 40 minutes. Let fruit bread cool down. Wrap into aluminum foil and leave it for 1-2 days in a cool place.
  3. Chop walnuts and roast them in a dry pan. Stir icing sugar and orange juice up to a glaze. Take fruit bread out of tin, cover it with glaze and decorate it with walnuts, figs, dates and cranberries.
