- 1 pound Low sodium Bacon
- 4 medium Sweet Potatoes
Take 4 medium sweet potatoes and peel them. Cut them into 1" chunks.
Cut bacon strips in half.
Wrap bacon around potato chunks. (No toothpick needed)
Place onto an oven pan with lip so that any grease from bacon doesn't spill out.
Put into 400 degree preheated oven. Cook for 20 to 25 minutes until bacon is crisp.
Drain on paper towels.
Serve and enjoy!
