Dirty Potatoes

  • Yield 6-8 servings
  • Prep 30 minutes
  • Cook included in prep time boil potatoes


1 can California Black olives
1 package white shredded cheddar cheese
8oz medium container of sour cream
9 medium red or white potatoes
1 each pinch teaspoon ground salt and tsp of ground pepper
1 sprig parsely-chopped fine
2 stalks chives-chopped fine


Peel and boil potatoes until soft ,then mash- leave slightly lumpy

add sour cream, shredded cheddar cheese , Hymalayan Sea salt  and pepercorn medley pepper into mashed potatoes or season to taste

then add  finely crush black olives  – may use food processor  (don't puree).   Leave three whole olives for garnish.

stir in crushed olives chives and parsley   (set aside a pinch of both cives and parsely for garnish)

put in decorative serving bowl potatoes should look dirty! place three whole olives in the center of potatoes on top sprinkle  parsely and chives that were set aside. -YUMMIE
