Cynthia’s Spinach Quiche

"This Spinach Quiche is a favorite. It's simple and easy to make."
- 4 to 6 large eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 8 ounces mozzarella cheese, cut into cubes
- 1/2 cup grated Romano cheese
- 1 (10-ounce) package frozen spinach, thawed and very well drained
- 1 unbaked piecrust
- Pepperoni (optional)
- Preheat the oven to 350F. Beat the eggs with the salt and pepper in a medium-size mixing bowl. Stir in the mozzarella, Romano, and spinach. Add the pepperoni, if desired. Pour into the piecrust, and bake for 35 to 45 minutes, until the center is set.
Tips From Our Test Kitchen: For a smoky flavor, substitute provolone cheese for the mozzarella.
