Curried Chicken with Sweet Potatoes
- Yield 4 servings
- 4 boneless skinless chicken breasts
- 3/4 cup chopped onion
- 2 sweet potatoes, cubed
- 1/4 cup orange juice
- 1/2 teaspoon minced garlic
- 1/2 teaspoon pepper
- 4 teaspoons curry powder
- Place chicken in slow cooker. Cover with onions and sweet potatoes. Combine orange juice, garlic, pepper and curry powder. Pour over vegetables and chicken in slow cooker. Cover and cook on low 5 to 6 hours.
Tip: Serve over rice and top with your choice of condiments: sliced green onions, shredded coconuts, peanuts or raisins.
