Cucumber Lime Mint Popsicles

  • Yield: 4 servings


1 handful fresh mint
1/2cup sugar
1/2cup water
1 cucumber, peeled, cut in half lengthwise and seeded
Juice of 3 to 4 limes


  1. Crush mint with sugar. Combine with water in a small saucepan. Bring to a boil. Remove from heat; strain out mint leaves.
  2. Cut cucumber into pieces and place into food processor. Pulse until smooth. Add cooled syrup and lime juice to cucumber puree. Mix well. Pour into popsicle molds and freeze.
