Crunchy Pea Salad
- Yield: 8 servings
- 1 10 ounce package frozen peas, thawed
- 1cup diced celery
- 1cup cauliflower florets
- 1/4cup diced green onion
- 1cup chopped cashews
- 1/2cup sour cream
- 1/2 to 1cup ranch dressing
- 1/2cup crisply cooked and crumbled bacon
- Combine peas, celery, cauliflower, onion, cashews, sour cream and dressing in a salad bowl; mix well. Chill until ready to serve. Top each serving with crumbled bacon.
Tips from our Test Kitchen: If you prefer softer cauliflower, steam and cool the vegetable before adding it to the mix. Low-fat yogurt and low-fat ranch dressing can be substituted for the sour cream and ranch dressing if you’re counting calories.
