Crunchy Grated Carrot Salad with Lime (Carottes Rapées)

  • Yield 6 servings

A super easy, fresh-tasting carrot salad, starring lime, cumin and cayenne.


1 1/2 pounds carrots, peeled and shredded
-- Fresh cilantro, chopped
-- Juice of 2 limes
2 to 3 tablespoons sugar
1 pinch sea salt
1 pinch cumin
1 pinch cayenne pepper


  1. Put  carrots in a super-big bowl and add everything else, tasting as you go.  Serve right away.
