Crunchy Grated Carrot Salad with Lime (Carottes Rapées)
- Yield 6 servings
A super easy, fresh-tasting carrot salad, starring lime, cumin and cayenne.
- 1 1/2 pounds carrots, peeled and shredded
- -- Fresh cilantro, chopped
- -- Juice of 2 limes
- 2 to 3 tablespoons sugar
- 1 pinch sea salt
- 1 pinch cumin
- 1 pinch cayenne pepper
- Put carrots in a super-big bowl and add everything else, tasting as you go. Serve right away.
