Creole Fudge Loaf

  • Yield: 1 dozen

Ingredients

1 3/4cups sifted cake flour
1 3/4teaspoons baking powder
1/2teaspoon salt
1/2cup butter or other shortening
1cup sugar*
1large egg, well beaten
2pieces (squares) unsweetened chocolate, melted
3/4cup milk
1teaspoon vanilla

Instructions

Sift flour once, measure, add baking powder and salt and sift together three times. Cream shortening, add sugar gradually and cream together until light and fluffy. Add egg and beat well; then add chocolate and blend. Add flour, alternating with milk, a small amount at a time, beating after each addition until smooth. Add vanilla. Bake in greased pan, 8x8x2 inches, in slow oven (325* F.) 1 hour or until done.* Spread Easy Fluffy Frosting (1/2 recipe) on top and sides of cake. When frosting is set, pour* Chocolate Coating over cake, letting it run down on sides. Keep cake in a cool place until chocolate becomes firm.
