Creamy Zucchini Dressing with Tahini and Lemon

This tart sauce perfectly dresses grill fish or lamb or a tossed green salad.

1 medium zucchini, trimmed and cut into 2-inch pieces
1/2 cup extra-virgin olive oil
1 garlic clove
1/4 cup lemon juice
2 tablespoons tahini
2 tablespoons water, plus more as needed
1 tablespoon honey
1/2 teaspoon coarse salt


  1. Combine ingredients in a food processor or blender. Whirl until smooth. Makes 2 1/4 cups.
