Creamy Zucchini Dressing with Tahini and Lemon
- Yield 18 servings
This tart sauce perfectly dresses grill fish or lamb or a tossed green salad.
- 1 medium zucchini, trimmed and cut into 2-inch pieces
- 1/2 cup extra-virgin olive oil
- 1 garlic clove
- 1/4 cup lemon juice
- 2 tablespoons tahini
- 2 tablespoons water, plus more as needed
- 1 tablespoon honey
- 1/2 teaspoon coarse salt
- Combine ingredients in a food processor or blender. Whirl until smooth. Makes 2 1/4 cups.
