Creamed Double Potatoes

  • Yield: 8 to 10 servings


1 3/4pounds sweet potatoes (yams)
1 3/4pounds baking potatoes
2tablespoons margarine or butter
1/3cup skim milk
2tablespoons honey


  1. In a large pot, cover baking and sweet potatoes with water and bring to a boil for 40 minutes or until tender. Peel potatoes and place in a mixing bowl with the margarine, blending until smooth. Gradually add the milk and honey, beating until creamy.
