Creamed Double Potatoes

Punch up the nutrition in mashed potatoes by adding sweet potatoes-a great sourse of beta carotene.
- 1 3/4 pounds sweet potatoes (yams)
- 1 3/4 pounds baking potatoes
- 2 tablespoons margarine or butter
- 1/3 cup skim milk
- 2 tablespoons honey
- In a large pot, cover baking and sweet potatoes with water and bring to a boil for 40 minutes or until tender. Peel the potatoes and place in a mixing bowl with the margarine, blending until smooth. Gradually add the milk and honey, beating until creamy.
