Crawfish Caserole

1medium Onion and Bellpepper
1pound Peeled and seasoned crawfish tails
1can Rotel Tomatos
1can Cream of Mushroom Soup
1package Shredded Sharp Cheddar Cheese
1package 16oz bag of Sofran (yellow) rice


  1. In one pot cook the packet of Sofran rice according to the directions on package.  In another pot saute your onions and bellpepper in butter or olive oil.  Once they are soft add crawfish tails and let them cook down for about 10 minutes.  Then add cream of mushroom soup and rotel tomatoes and mix thoroughly.  Now add your finished rice to the crawfish mixture and mix well.  Final step is to put it in a caserole dish and top it with the sharp cheddar cheese.  Bake in the over on 350 for about 30 minutes or until the cheese is completely melted and starting to brown a little on the sides.  I always add Zatarain's seasoning to my crawfish mixture before adding the rice (add to taste….we are true cajuns from Louisiana and we love us some Zatarain's!!!!!!!!)
