Fresh Cranberry Pie

This pie is always a hit topped with vanilla ice cream.

2 cups fresh cranberries
1 1/2 cups sugar, divided
2 eggs
1/2 teaspoon vanilla extract
1/2 cup melted butter
1 cup all-purpose flour


  1. Preheat oven to 325F.
  2. Place cranberries in a 10-inch pie pan that has been sprayed with cooking spray. Sprinkle 1/2 cup sugar over cranberries.
  3. Mix eggs, remaining sugar, vanilla, butter and flour and pour over cranberries. (Egg mixture and cranberries can be reversed for a more colorful pie. Bake 45 minutes to 1 hour. Serve with vanilla ice cream.
