Peel, core & finely chop Apples, Pears & Carrots, set aside. Combine Flour, Oats, Salt, Baking Soda, Cinnamon, Cloves, Nutmeg & Ginger, set aside. In large mixing bowl beat together the Eggs & Vanilla till light. Gradually add the Oil, beating on high for 2 minutes. Gradually add in the Sugar. Add the flour & fruit mixture beating well between each addition. Fill muffin tins almost to the top. Bake for 35 minutes or till a tester comes out clean.
