“Crack” Muffins
- Yield 2 1/2 dozen
Ingredients
- 2 medium Apples
- 2 medium Pears
- 1 cup Carrots
- 2 cups Flour
- 1/2 cup Oats
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 2 teaspoons Cinnamon
- 1 teaspoon Cloves
- 1 teaspoon Nutmeg
- 1 teaspoon Ginger
- 4 medium Eggs
- 1 teaspoon Vanilla
- 1 cup Vegetable Oil
- 1 1/2 cups Sugar
Instructions
Preheat oven to 350°.
- Peel, core & finely chop Apples, Pears & Carrots, set aside.
- Combine Flour, Oats, Salt, Baking Soda, Cinnamon, Cloves, Nutmeg & Ginger, set aside.
- In large mixing bowl beat together the Eggs & Vanilla till light.
- Gradually add the Oil, beating on high for 2 minutes.
- Gradually add in the Sugar.
- Add the flour & fruit mixture beating well between each addition.
- Fill muffin tins almost to the top.
- Bake for 35 minutes or till a tester comes out clean.
