“Crack” Muffins

  • Yield 2 1/2 dozen

Ingredients

2 medium Apples
2 medium Pears
1 cup Carrots
2 cups Flour
1/2 cup Oats
1 teaspoon Salt
1 teaspoon Baking Soda
2 teaspoons Cinnamon
1 teaspoon Cloves
1 teaspoon Nutmeg
1 teaspoon Ginger
4 medium Eggs
1 teaspoon Vanilla
1 cup Vegetable Oil
1 1/2 cups Sugar

Instructions

Preheat oven to 350°.

  1. Peel, core & finely chop Apples, Pears & Carrots, set aside.
  2. Combine Flour, Oats, Salt, Baking Soda, Cinnamon, Cloves, Nutmeg & Ginger, set aside.
  3. In large mixing bowl beat together the Eggs & Vanilla till light.
  4. Gradually add the Oil, beating on high for 2 minutes.
  5. Gradually add in the Sugar.
  6. Add the flour & fruit mixture beating well between each addition.
  7. Fill muffin tins almost to the top.
  8. Bake for 35 minutes or till a tester comes out clean.
