Cowboy Casserole

  • Yield 6 to 8 servings

Your family will love this hearty casserole.


1 pound ground beef
3 tablespoons fat
1 -- garlic clove
2 1/2 teaspoons salt
1 1/4 cups minced onion
1/2 cup minced green pepper
1 teaspoon chili powder
1 -- No. 2 can tomatoes
1/2 cup uncooked rice
1 -- No. 2 can kidney beans, undrained


  1. Cook ground beef in fat until lightly browned.  On cutting board thinly slice garlic; sprinkle with salt and mash thoroughly to a pulp.  Add to beef with onion, green pepper and chili powder.  Cook 5 minutes; remove from heat and ad tomatoes.  Combine rice and kidney beans in 2-quart casserole.  Add hot tomato mixture.  Bake, covered, 1 hour in a 350F oven.
