Cowboy Casserole
- Yield 6 to 8 servings
Your family will love this hearty casserole.
Ingredients
- 1 pound ground beef
- 3 tablespoons fat
- 1 -- garlic clove
- 2 1/2 teaspoons salt
- 1 1/4 cups minced onion
- 1/2 cup minced green pepper
- 1 teaspoon chili powder
- 1 -- No. 2 can tomatoes
- 1/2 cup uncooked rice
- 1 -- No. 2 can kidney beans, undrained
Instructions
- Cook ground beef in fat until lightly browned. On cutting board thinly slice garlic; sprinkle with salt and mash thoroughly to a pulp. Add to beef with onion, green pepper and chili powder. Cook 5 minutes; remove from heat and ad tomatoes. Combine rice and kidney beans in 2-quart casserole. Add hot tomato mixture. Bake, covered, 1 hour in a 350F oven.
