PrintEmail Ingredients 1 pound ground beef3 tablespoons fat1 -- garlic clove2 1/2 teaspoons salt1 1/4 cups minced onion1/2 cup minced green pepper1 teaspoon chili powder1 -- No. 2 can tomatoes1/2 cup uncooked rice1 -- No. 2 can kidney beans, undrained Instructions Cook ground beef in fat until lightly browned. On cutting board thinly slice garlic; sprinkle with salt and mash thoroughly to a pulp. Add to beef with onion, green pepper and chili powder. Cook 5 minutes; remove from heat and ad tomatoes. Combine rice and kidney beans in 2-quart casserole. Add hot tomato mixture. Bake, covered, 1 hour in a 350F oven.
