Cinnamon Orange Pancakes

Ingredients

3/4cup all-purpose flour
2tablespoons wheat germ
2teaspoons baking powder
1cup skim milk
-- Egg substitute equivalent to 1 egg
1cup whole wheat flour
1tablespoon sugar
1teaspoon cinnamon
3/4cup fresh orange juice
1teaspoon grated orange peel

Instructions

  1. Combine the first 6 ingredients in a bowl and mix well.  Combine the skim milk, orange juice, egg substitute and orange peel in a bowl and mix well.  Add to the dry ingredients, stirring just until moistened.  Spray a hot griddle or nonstick skillet with nonstick cooking spray.  Pour 1/4 cup batter for each pancake onto the riddle.  Bake until bubbles appear on top and the edges are dry, turn.  Bake until brown.
