Chocolate Chip Banana Bread

Yield 26 servings
Yummy chocolate morsels are scatted throughout this moist and delicious banana bread.
2 1/4 cups all-purpose flour
1 cup sugar
1 1/2 cups well-mashed ripe bananas(3-4)
1/2 cup shortening
2 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 pinch salt
1 1/2 cups chocolate chips
Preheat oven to 375F. Grease and flour the bottom and sides of two 9 x 5-inch loaf pans.
Place all ingredients except chocolate chips in a large mixing bowl. With mixer at low speed, beat until well combined, scraping bow often, then beat at high speed 4 to 5 minutes, occasionally scraping bowl. Add chocolate chips and mix well.
Pour batter into pans and bake 25 minutes, until surface turns golden brown and a toothpick inserted in the center comes out clean. If bread is not done, reduce oven temperature to 350F and continue baking 5 to 10 minutes. Let cool in pans 5 minutes.
