Chocolate Zucchini Cake

  • Yield 12 servings

Ingredients

1/2 cup margarine
1/2 cup salad oil
1 3/4 cups sugar
2 -- eggs
1 teaspoon vanilla
1/2 cup milk w/ 1/2 tsp. lemon juice
2 1/2 cups flour
4 tablespoons cocoa
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cloves
1/2 teaspoon cinnamon
1/4 cup chocolate chips
2 cups zucchini - finely diced

Instructions

  1. Combine first six ingredients and mix well.
  2. Gradually add next seven ingredients mixing well after each addition. Add the 2 cups of Zucchini and mix well.
  3. Pour into 13 x 9 inch pan and top with 1/4 cup chocolate chips ( I have also used peanut butter chips on top)
  4. Bake @ 325 degrees for 45 minutes.
