Chocolate Zucchini Sheet Cake

  • Yield: 10 to 12 servings


1/2cup soft margarine or butter
1/2cup oil
1 3/4cups sugar
2 eggs
1teaspoon vanilla
1/2cup sour milk (yogurt or sour cream or plain milk will do)
1teaspoon baking soda
2 1/2cups flour
4teaspoons cocoa
1/2teaspoon salt
1/2teaspoon cinnamon
1/2teaspoon cloves
2cups shredded zucchini
10ounces semi-sweet chocolate chips
1/4cup chopped nuts


  1. Preheat oven to 325F. Cream margarine, oil and sugar.
  2. Add eggs, vanilla and sour milk.
  3. Sift together flour, cocoa, salt, cinnamon, soda  and cloves.
  4. Blend with creamed mixture and stir in zucchini.
  5. Spoon into greased and floured 13 x 9-inch pan.
  6. Sprinkle with nuts and chocolate pieces.
  7. Bake 40 to 45 minutes.
